OPAL'S FAMILY CROCKPOT FAVORITES:
SWEET CORN AND BLACK BEAN CHILI
Inspired by this recipe
How we alter it:
- Ground Turkey
- Extra Corn // Less Beans
- Didn't use Bullion, but did you use some Beef Broth to thin it out towards the end
- Crock Pot - brown meat and add everything to the crock - cook on low for 4-6 hours
- Optional Additions
CROCKPOT SALSA CHICKEN
Literally the easiest crockpot meal. Only 2 ingredients + 1 minute prep time…count me in! Great for tacos, salads and nachos. Plus great leftovers! Kid approved!
Here it goes:
4 chicken breasts + 2 cups of salsa
Add to crock and cook on low for about 6 hours
Shred and Enjoy
CHICKEN TIKA MASALA
We follow this recipe to a T and love it EVERY TIME.
It’s also an amazing freezer meal. Make it ahead of time and drop it in the crockpot when you’re ready. Serve over rice - minute rice to make it real easy! Basmati rice if you’re feeling a little extra.
MEL'S FAMILY INSTANT POT FAVORITES:
CHICKEN NOODLE SOUP
We follow this recipe but I usually add more veggies and noodles:
This recipe makes great freezer meals and is a kid, toddler, baby favorite! The chicken, noodles and veggies get so soft, making it super easy to eat! Love to pair with a fresh baguette or grilled cheese.
We follow this recipe but we swap the tomato paste for just 2 cups of beef broth. I prefer to make my own with Better Than Bouillon.
Makes great freezer meals!
SHREDDED CHICKEN TACOS
Here's out fave recipe: click here. I add in beans and frozen corn as well. Instead of a can of salsa, I choose to add a can of tomatoes and peppers.
If you use mild seasoning, this is kid friendly! You can definitely spice it up by getting hot seasoning or adding your own seasoning! The chicken also makes a great salad topper for meal prepping!
